Ramadan Special: Delicious Iftar Menu by Güzide Mertcan

Sometimes thinking of what to cook can be challenging during Ramadan. Güzide Mertcan has prepared an inspiring iftar menu with delicious recipes — special tomato soup, leek patty, salmon kebabs and chocolate and banana crumble.

Roasted Red Pepper Tomato Soup


3 large tomatoes

2 red bell peppers

2 cloves of garlic

1 onion

2 tbsp.  of butter

2 tbsp. of olive oil

1 tbsp. tomato paste

1 tsp. of dried mint

1 tsp. of black pepper


Roast red peppers, tomatoes, onion and garlic with olive oil and salt in a 200 degree C oven until tender and charred on all sides. Melt butter in a large pot and whisk in flour until smooth. Add tomato paste and keep whisking. Then take red peppers and remove charred outer skin seeds and stems. Add to soup and blend. Add water as you wish and leave to a simmer over medium-low heat for 10 min. Adjust seasonings as needed, adding black pepper and dry mint. Serve with croutons and cheese.

Leek Patty


2 leeks

1 carrot

3 zucchinis

½ bunch dill

3 eggs

½ cup of milk

1 tsp. of salt

1 tsp. of black pepper



Grate the zucchini, leeks, and carrots, add salt, rub, and wait for half an hour to release the water. Take all the vegetables into a pot by squeezing well with your hand. Put eggs, milk, pepper, dill and all other ingredients and mix. Since your zucchini may have a different juiciness, add flour until it resembles a cake. You can add cheese into it or put on it as topping. Bake in a 180-degree oven until golden.

Salmon & Mushroom Kebabs


2 Salmon Fish Fillet (Boneless/Skinless)

250 grams of mushroom

4 green peppers

3 tbsp. of olive oil

Salt, black pepper


Chop salmon into cubes. Thread mushrooms, salmon, and green onions alternately onto skewers. Add the olive oil and salt and cook for a short time in the oven or pan.

Dark Chocolate and Banana Crumble


4 bananas

1 Dark Chocolate Square

1 tsp. of cinnamon

1 tbsp. of caster sugar

1 packet of vanillin

1 cup of flour

2 tbsp. of butter


Mix butter, flour, caster sugar and cinnamon together until it resembles fine breadcrumbs. Peel and slice bananas. Arrange them in an ovenproof dish, sprinkling over dark chocolate pieces. Spoon your crumble mixture over bananas and press down gently. Bake in a 200-degree oven until lightly golden. You can serve with ice cream.
